I found a recipe that was tucked in a used book. It’s called tip of finger tamale pie. What is tip of finger?

It calls for one. Then says optional. I’m assuming it’s a meat of some sort, but I can’t find anything. Can anyone tell me about it?

In the dark as much as you. The only beef cut I know with "tip" in its name is tri-tip (a triangular section of the sirloin) and it is mostly roasted, while tamale pie recipes with beef mostly use ground beef.
Tamale pie is an American southwest invention, not a Mexican food. If you like the idea of a casserole based on cornmeal and cheese, there are many versions available - beef, chicken, pork, vegetable.
