Small kitchen alternatives for dough

I have a small kitchen, with little counter space. Could I press the dough into a lightly greased half sheet pan as an alternative to shaping it on the counter?

Do you mean you want to press the dough into the sheet pan and then fill, roll and cut it into individual rolls? Because yes, you could do it that way. If what you mean is to press the dough into a pan, top and simply cut into squares- then no, it won't. Although the recipe mentions shaping the dough on a kitchen counter, the fact is that as long as it is a clean, dry, flat surface, that's all that really matters. It could be a table, a desk top, a cutting board over the sink- as long as it's flat, hard, and clean.
