Can I refrigerate the dough the night before and bake in the morning??
Will these still turn out soft and pillowy if I refrigerate them overnight? When would you put them in the fridge? How would you prep them to bake in the morning?

For years, I made big pans of cinnamon rolls and sticky buns during the holidays, to give to our neighbors and other friends. I'd deliver them on Christmas Eve!
After the first rise, shape the dough, put the bun rolls in the pan, and tightly cover. (When I was making them for gifts, I bought round take-out pans with coated paper covers. When making sticky buns over the years for my family, I used cling wrap.) Put the covered pan in the fridge immediately.
Refrigerate for 10 - 12 hours (no more than 16). In the morning, take the pan out of the refrigerator and let it sit on the counter for 1 - 2 hours before baking, proceeding with the recipe as drafted.
