Absolutely they can. Let them cool. then place a sheet of waxed paper between each. Then into your freezer bag and close tightly. Max one month I would suggest and they will be in tip-top condition. To defrost, heat the oven to around 375F lay the pancakes on a baking sheet and pop them into the oven for around 5 minutes. - Elaine Lemm
