Dairy free version possibility?

Do you think it would work to use coconut sweetened condensed milk, and fold in the pecan/SCM mixture with a whole container of coconut whipped topping (trader joe's) and freeze?

Wow, fun Q! It might. But it'll have a very coconutty flavor, and the texture will be different in some way. Honestly, I think your best bet is to start with a vegan ice cream template, then butter-pecan-ify the flavors from there. I agree . . . I recently substituted coconut sweetened condensed milk for regular (in a macaroon recipe) and found the consistency quite different, and overall, it seemed less sweet. Sweetened condensed coconut milk would also give a coconut-ty flavor, which to my mind would detract from the delightful distinctive flavor of the pecans.

It's better to look for a recipe tested without regular cream, as Ms. L. suggests. ;o)
