Can I freeze this cake once it's baked?

I'd like to make the whole thing then defrost in two weeks. I'd wrap in paper and foil etc...

Yes, freezable (whole or cut in pieces for easy defrosting single portions).
Just don't dust it with confectioner's sugar before freezing. Do that after removing from freezer or before serving.
