No organic walnuts available now….

Any chance one could substitute pecans or almonds for the walnuts?

I bet pecans would be great! Almonds would work well as the flour, but might be a bit too crunchy in the brownies (chopping the pieces smaller would help that).

In Alice Medrich's original recipe, you can use either natural or Dutch-processed cocoa. I’ve made it both ways, and it’s delicious and foolproof.

Just checking, since it isn’t stated in either the recipe or the video- is the cocoa natural? It appears to be, but there are so many shades of Dutch-processed cocoa that vary by producer, that it’s hard to be certain. Thanks!

Costco has organic walnuts if there’s one near you.

Yes, of course, or non-organic walnuts, if those are available.

If substituting almonds, I'd coarsely chop and very lightly toast them before adding to the batter. ;o)
