I love cardamom and really want to make this, but I am trying to go Paleo. Has anyone subed almond flour instead of regular flour? thanks

Hi there! So, I’ve been making a flourless almond cake from Simply Recipes for years; it also uses cardamom. I was thinking, you could add the sugar and almonds to the bottom of the pan and bump up the cardamom.

It's tricky substituting almond flour for regular flour in a cake like this, where there is a fair bit of flour relative to the other ingredients, so the cake's structure may depend on it.

I'd look for a cake developed and tested using almond flour, and then add some cardamom to the batter. As this cake is made like European génoise cakes which do not depend on the flour or baking powder, for structure, I think you would be able to substitute. Alice Medrich published a book a few years back called Four Flours, where she devised recipes to use gluten free flours. Her cakes are made similar to the Cardamom cake, ie, involving heating the eggs and sugar until they increase in volume, then folding in the dry ingredients, followed by folding in the butter. the crumb might vary a bit though. You might want to try this with oat flour instead of almond meal too.
