I’m confused when I cut the petals. Before or after the final proof? My gut says to cut the petals then proof. Am I wrong??

Yes, proof the dough first, then cut just before baking. See step 6 where the petals are cut just before baking!

When I followed the directions as written my petals deflated and became misshapen. If you try it the way your gut tells you please let us know how it turns out! I suspect it will work better your way.

The recipe is very specific. It says to proof the dough first, and to cut the petals just before baking. (See step 6.)
