I've had my little Peugot pepper grinder and salt shaker set for who knows how long--possibly as much as 40 years. Still working fine!

I will heartily second the Peugeot recommendation. I've owned both tan and dark brown pepper grinders (their smallest tabletop size) for close to thirty years.

I have no experience with salt mills since I use salt cellars instead.

"Right" is a very subjective term. And these mills range in price from basic to designer stratosphere.
You can look for reviews by magazines and websites - best pepper and salt mills of 2022, etc.
Things to look for.
Essential for the pepper mill is a metal grinder, reliable brand with a good track record, and a guarantee or return policy.
Also very nice is capacity to adjust the grinder (fine, medium, coarse) for different recipes or applications.
Apply similar standards on company track record and warranty. Grinder is usually plastic.
Don't fill one with the contents designed for the other - I think the salt will corrode the pepper grinder and the salt grinder won't do a good job on peppercorns.
Clear (usually acrylic) is fun for both seeing the fill level and for the multicolor peppercorns.
Two brands I've used for a long time and can recommend are Peugeot (old standard, made for more than 150 years) and Zassenhaus (company from mid 19C, pepper mills from early 20thC)
