Dried fenugreek (methi) would be a sensational alternative to seeds in this flatbread. It's a wonderful herb to have on hand - so flavorful, and delicious. I've been using it often (will tonight, in fact!) in this real keeper: https://food52.com/recipes/78019-archana-mundhe-s-instant-pot-butter-chicken which I also make with fish. I like it so much I sent dried fenugreek leaves to my adult sons, with the recipe! I know there are recipes out there for flatbreads made with methi, which I've been meaning to try. I"ll probably just use this recipe instead, as the creator is one I trust. Oh, just discussing this is making me hungry!! ;o)
So many things….za'atar (which does often have sesame seeds, but you can make it without); any mixture of dried herbs that you like; finely chopped nuts and/ or dried fruit. Lemon zest. Any spice blend you like (everything bagel seasoning?). Salt and pepper. Chili powder. Or nothing. It’s bread, it will be delicious.

But beware of Everything Bagel if you need/want to avoid seeds. It usually has both sesame and poppy seeds.
