Any tips on making this cake a day or two ahead? Store in the fridge?

That's what I do! Because my frosting skillz are not what one would call awesome, I bake the cakes and make the jam the day before because I need a whole day to frost before I serve. Just wrap them well & keep them airtight. You know the drill ;)
