I don't have rice syrup, could one cup of maple syrup be used instead?

I don't know...I believe the brown rice syrup is going to be less sweet and hold them together better.

good point.
I was working from a recipe developed with maple syrup.
Did some checking and found a good article at the spruce eats site which recommends using 3/4 volume of other sweeteners when replacing brown rice syrup.

I think it will be fine…I make a similar dish that calls for all maple syrup and it tastes very good.
