I think you could easily substitute a gluten free flour blend like Cup4Cup.

Read through the recipe reviews. At least two community members made this gluten free.

One commenter unfortunately did not specify what worked, sadly all-too-common behavior on the Internet these days.

The second commenter -- Rob W. -- posted a more useful review by listing two gluten-free flours that worked okay, a third that did not, and a fourth that was "fantastic." He posted his observations on July 13, 2020. This is the more thoughtful way to provide useful commentary on the Internet and give something back to the community.

Next time, use your web browser's built-in search function. This is ctrl-f on Windows PCs and command-f on Macs and input your search query (like "gluten") into the dialog box.

I only searched through the first page of reviews. I did not search through all 108 of them so there might be more.

Frankly Rob W.'s review is pretty precise. I wish more people on the Internet (not just here at Food52) posted helpful comments like his.

These days >97% of requests for advice are never followed up by the original poster about what actually worked (or didn't). 10-15 years ago people actually had enough netiquette to do so.
