You're supposed to sprinkle it over the galette before it goes into the oven.

He's not even following his own recipe verbatim, using sprigs instead of chopped thyme leaves.
Your call whether to use chopped thyme or sprigs. Unless the sprigs were the really soft tips, I'd probably chop. The thicker sprigs are too woody for me to chomp on. But that's just me...
