Question re low-carb adaptations

Love the flavor profile. How do folks think it would work with all almond flour or a mix of almond and coconut flour and a sugar substitute??

There are existing gf versions of cookies with this flavor combination.
I would rely on one of them, as they’ve already tested workable gf flour and moisture ratios, then just use the sweetener you want (an easier substitution).
