Would white wine be a good substitute for the dry hard apple cider?

Use a dry white wine such as white Bordeaux, Vinho Verde, or Pinot Gris. If the alcohol is the issue you can use regular apple cider or kombucha. Let me know what you go with!

It will work but try to avoid wines that are too mineral. Perhaps use riesling or pinot Grigio, even unoaked chardonnay.
