I would not refrigerate it by choice.

Like most classic Italian cakes, it was developed in an era before refrigeration. There's a version of this cake in Pellegrino Artusi's classic 1891 cookbook "La scienza in cucina e l'arte di mangiar bene" but naturally the dish is much older than that.
