How could I make the dumplings gluten-free and still be fluffy and wonderful?

I can’t guarantee the fluffy and wonderful part, but I’ve been very successfully using gluten free flour substitutes. Cup4Cup is my favorite. King Arthur flour and Bobs Red Mill both make good products also.
