As far as I know, 1) for decoration and crunch as on top of breads or rolls; 2) for color contrast and crunch, for example in lemon poppy-seed cake; 3) for making a sweet paste to fill pastries, as in central and eastern Europe; 4) in various spice blends, as for bagels, fruit, some savory dishes.
