I don’t have a cast iron pan - what would you recommend instead? Can’t do 450 with my oven. Would 400 work? Th ks

For the pan - a heavy or 3-ply stainless steel, a sturdy wok, a Dutch oven.
For the temperature - yes 400F will work (esp as most roast chicken recipes call for 350). But it will take a bit longer.
