Can I cook this with bone-in skate wings or only use fillets?

Cooking on the bone adds so much flavour, not to mention the potential to waste delicious flesh in the deboning process! Yum :)

Hi MindtheGap (I'm guessing you are from London given your handle!) — Most skate wings in the US are sold filleted and skinned, so I would recommend fillets from a fishmonger to preserve as much of the flesh. Have you tried this either way? Would love to know!
