The addition of vinegar or lemon juice at the end is just to adjust the acid balance to your liking. When I last made this, I opted to use some pomegranate vinegar I bought to try out. That was a major yum add in. Prior to that, I have used cider vinegar instead of more lemon juice since I didn't want more lemon flavor itself. I think any vinegar could work, though I would probably favor the cider for a more nuanced flavor if you didn't have the pomegranate version. Or even a balsamic vinegar, which I have not tried.
