If you're interested in Italian food, there's a terrific spring/Easter pie with spinach, eggs, ricotta and puff pastry. Called either Torta di Spinachi or Torta Pasqualina (Easter pie).
You could build a meal around that as main dish, with a Ligurian fish dish (branzino, cod, other white fish) as appetizer, and a light dessert (Baci or Amaretti) or pan di spagna.
To make torta di spinachi for two, cut a regular sized recipe for about 8-10 in half and save leftovers for a lunch or dinner later in the week. Or make all portions in individual tart pans with the puff pastry, and again save some for eating later in the week.
Or, if you prefer serve the fish as the main dish and the pie as appetizer.

For the SPINACH PIE, there are many good recipes out there. I learned Anita Sheldon's recipe, like it a lot and serve both for home meals and guests.
