when making fruit pudding in the frying pan, what is the best way to cook so that it doesnt break up thanks

I'm not really familiar with cooking a pudding like this, but I'd guess you'd want to make sure it was pretty compact to start with, then fry it in plenty of butter so it doesn't stick. And try not to move it around much, just flip it gently. Good luck!
