Knock Your Socks Off Menu Ideas?

Hello, next week I will be preparing a dinner for my employers Board of Trustees (25-30 people). I *really* want to wow them and while I am a decent cook, I am by no means a professional. Any menu recommendations for dishes that are sure to impress them (but are manageable for a solid home cook cooking for a crowd) would be greatly appreciated. Thank you in advance. :)

Not a perfect menu yet, but some ideas.

Have three courses
1) nibbles for when people arrive and are having drinks (for example, bruschetta, with a choice of toppings)
2) main for sit down. Avoid something that you have to cook to taste for each person, like a steak. Go for something easy on the grill. Or a stew you know/think people will like.
3) dessert to round out the meal. Tiramisu, trifle, shortbread or the like.

In each course have a vegetarian option for those who might want it.


Highlight, if possible, some seasonal and/or local foods. Asparagus, cherries, peas, fiddleheads, arugula. Spring lamb, or other accessible meat you and your crew like to eat.

PS In the main, it is understood there will be vegetables - as sides or as part of a stew. And some carb - potato, rice, or whatever goes nicely with the main. But/and try to avoid repeating the bread and the toppings from the first course.
