When is the best time to cook steak at a dinner party?

Its my mum's 60th birthday and I am cooking her a meal at home to celebrate. I obviously want to be a good host and not be away from the dinner table too long. My question is would it be sensible to cook steak along side cooking the starter so I can let it rest while we are eating our starter?! Is there such a thing as resting steak for too long?! Any tips would be greatly appreciated

That's so thoughtful of you! With respect to resting time, it really depends on how long you'll be eating the appetizers and what temperature you like your food. (I like room-temperature food myself, but not everyone does.) I bet this would be a great recipe for a special occasion: https://food52.com/recipes/76887-steak-au-poivre.

Another option is cooking a reverse-sear steak, where it cooks in a low-temp oven for upwards of 30 minutes (say, while you're eating the apps), then gets finished in a hot skillet (more on that here: https://www.seriouseats.com/recipes/2018/10/reverse-seared-steak-recipe.html).

Hope that helps and happy birthday to your mom!
