I think grilled chicken - or even leftover roast chicken (rotisserie chicken, I'm looking at you) - would be fantastic in this salad. What a great idea!! I'm going to try it. Thanks!! ;o)
Just a small caution - shrimp is high in sodium content.
So, for balance of taste (and health, if anyone at table is watching salt intake), I would omit or cut the amounts of salt in the dressing and the goat cheese.
