This cake came out nothing like the descriptions. Can you tell me what I did wrong or give ideas?

I made as per the recipe. After 30 minutes, it was still almost liquid in the center and kinda cooked around the outer inch. After 40 minutes, it was still very gooey in the center. My tester (I use straw) came out with globs of batter on it. In the end, I baked it for 50 minutes. I covered loosely with foil after 35 minutes as the top was getting very dark. The foil may not have helped, but otherwise the top was going to be very very dark. Some parts looked almost burned. I used a 9 inch springform pan. Next time I will use the 10 inch one. Can you think of anything else? I put the grated apples directly in. Should I have set them over a strainer to get rid of some of the moisture? In the end, I may have to call it Louisa's baked ricotta and apple pudding. :)

If you're sure you measured everything correctly, it sounds like your oven might run a bit hot. That would cause the outside to get dark before the inside finishes cooking. Do you have an oven thermometer?
