mincemeat cake updating an old recipe

I have a family recipe for mincemeat cake using the condensed nonesuch mincemeat which is no longer available. The recipe calls on rehydrating the mincemeat with 5c coffee and shortening overnight. I was thinking of using jar mincemeat and using the liquid and coffee to get 5 cups total. Any suggestions on how to adapt?

I have no suggestion on recipe adjustments but yes a few suggestions.

* Nonesuch Classic Mincemeat (is this the condensed or a different one?) is yes available on Amazon Canada, but for a ridiculous price C90 (about US65).

U*se another tried and true mincemeat cake recipe. Three suggestions:

1) UK favorite from Mary Berry (long-time cookbook author and tv presenter, including on Great British Bake Off)

2) a USA recipe from reliable and popular allrecipescom site
https://www.allrecipes.com/recipe/8085/quick-fruitcake/
https://somethingsweetsomethingsavoury.com/mincemeat-loaf-cake/

3) well regarded loaf cake recipe with mincemeat as one of its variations

Clarification -
The Mary Berry recipe link is mistakenly placed second under #2 aUSA recipe. It is at something sweet something savoury site.
