You can find pistachio oil at any of the locations listed below or online. But I also wanted to step in here and say that you could make any number of swaps for different oils.
To most closely resemble it, I'd use another nut based oil like peanut or walnut. But honestly any neutral oil would work here, my favorite being grapeseed oil.
Amazon has a few products of course. Frankly I'm not surprised that their selection is limited.
Personally I'd go to a gourmet grocery store or an Italian market. If they don't stock it, they might be able to special order it from their wholesale suppliers. Just ask a store manager.
A couple of other possibilities might be Williams-Sonoma or Sur La Table. At least in my area, there's an Eataly marketplace. That's another bricks-and-mortar option that would be worth trying.
