Love chimmichurri. Blanching is a great idea. I normally roast the garlic to soften the flavor but blanching is certainly easier. Thank you both for your thoughts.

Grilled and served with a chimichurri sauce and lemon.
Hint: blanch the garlic a bit for the chimichurri sauce it helps soften the flavor.

or an avocado creme sauce. Avocado, yogurt, cilantro, lemon juice.

Lastnightsdinner's Spring Onion Creme sauce is great with any fish.

I recently had amberjack in a restaurant - they lightly breaded it and pan-fried it. It was delicious!
