Daughter wants to make Vegetable Samosas, after seeing it on a show! Any a quick and easy recipe? *doesn't have to be strictly authentic.

My daughter is 8 and she saw an episode of "How to be Indie" on Disney :-)
We made them based on Panfusine's and Lorigoldsby's suggestions (as they were the first replies) wrapped phyllo -- most importantly she and her little brother had fun making them! Who says kids can't learn anything by watching TV ;-) Thanks a Million everyone!

Potato) - 1 no
Green peas - 1/2 cup
Carrot - 1 no
Onion - 1/2 cup
Green chillies - 2 nos
All purpose flour 1/2 cup
Wheat flour - 1/2 cup
Salt - to taste
Turmeric powder - 1/2 tsp
Chilly powder - to taste
Oil - 1 cup



Preparation Method
1)Cut potato and carrot into small pieces.

2)Cook potato, carrot and green peas.

3)Heat oil in a pan.

4)Splutter mustard seeds.

5)Add onion , green chillies and saute well then add cooked potato, carrot and peas mix.

6)Add turmeric powder and chili powder and cook for 2 - 3 mins.

7)Mix all purpose flour and wheat flour and form a soft dough.

8)Roll the dough to oval shapes and cut each oval shape into 2 halves.

9)Put the cooked vegetable mix in each half and close the ends to make triangle shaped samosa pieces.

10)Heat oil in a pan and deep fry the samosas.

I saw Aarti Sequeira make these Chicken and chutney baked samosa's

Although it looks like a lot of steps, its basically shredded chicken with mashed potato and spices wrapped in puff pastry and baked. I liked that the samosa's didn't have to be fried.

Not sure how old your daughter is..taught my daughter to make this recipe that she could replicate in the dorm. 1 box of phyllo dough, 1 pkg frozen mashed potatoes, 1 bag frozen peas, butter and curry powder.

Cook potatoes according to pkg directions (adding salt, butter and a little less milk than they reccommend). Add frozen peas. sprinkle curry powder to taste.

Unwrap phyllo dough, Using a sheet at a time, fold into 3" strips. add a little melted butter on top of strip. Take a spoonful of the mashed potatoes and put n the middle of the top of the phyllo dough. Fold in half to create a triangle and fold down in triangles (like folding a flag) 2-3 times. seal with butter and cut, and repeat with the other half of the leftover strip. Either fry in oil, or bake on a baking stone.

use dumpling wrappers from the chinese store,

For the filling
boil 2 potatoes, & 1/2 cup peas, smash them.
Add salt, black pepper, a pinch of garam masala, very finely minced ginger & green chilli, (1 tsp ) chopped coriander (1 tablespoon) and juice of 1/2 -1 lime. Mix these together.

Place a tablespoon of filling in the center of the wrapper, fold over. (moisten the edges with water so that they stick). Press tight to eliminate air pockets & deep fry!
