Beet Tagliatelle - what to do with it???

I bought some beet tagliatelle from the noodle guy at my local farmers market. Any recommendations on what to do with it? What would pair nicely with that flavor noodle? Greens? Ricotta?

Both of those sound like great pairings. Maybe fold in some greens (beet, if you have them) wilted in garlic and oil and then sprinkle on some ricotta salata or feta to offset the sweetness of the beet pasta. You could add a splash of vinegar to the greens as well to brighten things up.
