Homemade Cream Cheese?

Obviously somone 100 years ago figured out how to make it. So I am wondering does anyone know how to make homemade cream cheese. I am not even sure why I want to make it, but it sounds really good.

I love state universities, they are a wonderfully accessible knowledge base for agriculture and food and canning and planting.
