Demerara sugar is brown sugar the way it used to be made. Nowadays brown sugar is white sugar with some molasses added in.
Its name is geographic, referring to a place in Guyana. Demerara is pretty similar to turbinado sugar and other products labeled as raw sugar. It's more crystalline than what we think of as "brown sugar."
