best way to keep golden beets from oxidizing?

Maybe try some acidulated water? Add a tablespoon or so of lemon juice to a bowl of water and toss in the beets.

I just toss them into the water with my potatoes as I'm chopping things up. Seems to work. I do see some oxidization while they bake usually, but that's only if I didn't coat them thoroughly in oil.
