Any suggestions for side dishes for ham? Besides the standard mash potato?

Celery root and apple purée is delicious with ham. Ina Garten has a wonderful recipe in her Barefoot Contessa Back to Basics cookbook.

Roasted cauliflower with anchovy, golden raisins, caper and balsamic dressing. Roast cauliflower half way, then toss on the dressing to finish. So tasty. From the NYT maybe three or four years ago.

I like an au gratin potato with ham. I also saute chopped fruit (canned is fine) with butter, brown sugar and curry to taste.

I like ham with apple. Roasted root vegetables with some apple slices thrown in? Or a savory apple sauté with shallots and thyme? Or roasted brussels sprouts with apples?

Potato Gratin with Boursin

2 cups whipping cream
5-ounce package Boursin cheese w/herbs
3 pounds red potatoes, peeled, thinly sliced

Preheat oven to 400°F.

Butter 9x13-inch baking dish with 2-inch-high sides.

Stir whipping cream and Boursin cheese in heavy large saucepan over medium heat until cheese melts and mixture is smooth.

Arrange half of sliced potatoes in baking dish.
Generously season potatoes in dish with salt and pepper.
Pour half of cheese mixture over.
Arrange remaining potatoes atop potatoes in dish.
Season again with salt and pepper.
Pour remaining cheese mixture over potatoes.

Bake until top is golden brown and potatoes are tender when pierced with knife, about 1 hour.
Serves 8.

Warm German potato salad is my favorite. Holler if you'd like an Oostburg, Wisconsin version.

A potato gratin would be better than mashed. Macaroni and cheese perhaps. Also consider a celery root remoulade.

Any variation of roasted vegetables would be great, or maybe these Pink Greens: http://www.food52.com/recipes/602_pink_greens

A very southern side dish is collards braised with bacon. Here's a recipe you might like:
