Winter Breakfast Hash

Ingredients
  • 6 ounces Thick Cut Bacon
  • 1 Red Onion
  • 1 cup cooked Squash
  • 1 Large Yam
  • 1 cup White Mushrooms
  • 1/2 cup Chopped Parsley
  • 2 Cloves, Garlic
  • 4 Fried Eggs
Directions
  1. Dice the Onion, Zucchini, and Yam into small, about 1/4 inch pieces. Quarter the mushrooms and Chop the parsley.
  2. Chop up the bacon into similar, 1/4 inch sized pieces, and fry on medium heat until some of the fat has rendered out.
  3. Add the Onion, Yam, squash and Mushrooms to the pan. Toss together and season with salt. Cover and fry for 5 minutes.
  4. Turn up the heat to Med-high, add the Garlic and fry until all the pieces are browned and crispy.
  5. Take the pan off the heat. Add the chopped parsley, season with Salt and Pepper, and serve with a fried egg on top.

This is delicious! I sauteed the vegetables individually but will try it as suggested next time (certainly will be easier). This was a dinner dish and I had some breakfast chicken and apple sausage so I didn't add bacon to the hash but will try that next time as well. I served a salad with a mixture of greens, thin sliced red onion, tomato grapes, seeded cucumber, and celery with a garlic vinaigrette (Garlic Expressions) and a poached egg. On the table for toppings...croutons, dried cherries and currants, fried onions and toasted pecans. No leftovers but sent your recipe home with a friend from NYC!
