How many times have I eaten blue cheese and apples and in how many combinations? And yet I had never thought of putting them together in a sandwich, wrapped with brown paper, to be eaten on a bench outside of King’s College while the choir practiced for the upcoming Christmas concert and the students rushed around in their robes.
Hardly a recipe here, but I’ll still share it.

Ingredients

fresh baguette, cut into sandwich parts

1 tablespoon
good quality unsalted butter, per sandwich (so 4 tbsp if making 4 sandwiches)

apple, Cox’s or Gala preferably (2 apples for 4 sandwiches)

slice of English blue cheese, preferably a Stilton (again, or 4 slices for 4 sandwiches)
Directions

Spread the butter onto the bottom half of your sandwich parts.

Cut the apple into wedges about ½ inch thick. I find that I need about a half an apple for a 6-inch long sandwich.

Pile the apple wedges onto the buttered half of the baguette.

Lay the slice of blue cheese on top of the apple wedges and top with the other half of the baguette.

Give it a gentle smash, and enjoy.
Someone once said, "the wise man knows that he knows nothing at all." Therefore if I spend my days seeking knowledge than I am simply trying to be a better fool. Hopefully I will eat well along the way.
