California has an abundance of wonderful tree nuts. On the way to the foothills of the gold country the road is lined with honor stands selling almonds and walnuts and cherries and other fruit. I like the contrast of the sweet nuts and acidic dried cherries or cranberries. But, the secret to the outstanding flavor and what makes it different from other granolas is plenty of olive oil! —dymnyno

Ingredients

cup pistachios

cups walnuts,chopped and halves

cup almonds

cup coconut chips (unsweetened)

cup maple syrup

1/2
cup brown sugar (or brown sugar splenda)

teaspoon cinnamon

3/4
cup olive oil

cups dried cherries or cranberries

cups old fashioned oats
Directions

Heat oven to 300 degrees

Mix all ingredients, EXCEPT the dried fruit. which you add after you remove the granola from the oven and it has cooled. Be sure that you use "old fashioned oats" ...not instant.

Spread all the ingredients on a deep baking pan and BAKE in the oven for about 45 minutes. Stir every 10 minutes until starts to turn golden.

Take the mixture out of the oven and then stir in the dried fruit after it is cool.
