Author Notes: This is a rustic version of the dainty and delicious benedictine tea sandwich. —Louisa
- 1 small cucumber
- cream cheese
- 1 green onion
- fresh dill (optional)
- 1 slice Pepperidge Farm Ancient Grain whole wheat bread
- While the bread is toasting peel cucumber, slice lengthways and scrape out seeds. Slice the cuke into long ribbons.
- Spread the toasted bread with cream cheese and sprinkle chopped green onion on top.
- Top with cucumber ribbons. Sprinkle with dill, salt and pepper.
