Country Cousin Cucumber Benedictine Sandwich

Ingredients
  • 1 small cucumber
  • cream cheese
  • 1 green onion
  • fresh dill (optional)
  • 1 slice Pepperidge Farm Ancient Grain whole wheat bread
Directions
  1. While the bread is toasting peel cucumber, slice lengthways and scrape out seeds. Slice the cuke into long ribbons.
  2. Spread the toasted bread with cream cheese and sprinkle chopped green onion on top.
  3. Top with cucumber ribbons. Sprinkle with dill, salt and pepper.
