This looks great- anyone have a suggestion for a substitute for porcini powder? Not sure I can find it locally-thanks

Hi Jill! I just whiz up dried porcinis in a spice/coffee grinder to make the powder. I think any flavorful dried mushroom could substitute.

I love tenderloin, and your stuffing looks like I'll need to make twice as much to compensate for what gets eaten before even getting close to the pork.
