This soup is the most satisfying, very very flavorful, extremely easy to make and very appealing!I bought this from "Morrisons" almost every week in the UK. The coriander gives it a very earthy taste and the carrot makes it sweet.It is a very nice combination of the two and packed with nutrition.When we moved,I could not find this at the supermarkets here in America and started making it myself.Now its a staple in my household all the year round. —Soni's Food

Ingredients
  • 6 Large Carrots peeled and chopped
  • 1 Large Onion chopped
  • 2 tablespoons Olive Oil or Butter
  • 1 teaspoon Ground Coriander
  • 1/4 cup Orange Juice
  • 1 tablespoon Salt
  • 1/2 teaspoon Pepper
  • 3 cups water
Directions
  1. In a deep pot, heat oil or butter and add the chopped onions until soft.Now add the carrots and saute for a few minutes.Add the water, salt and pepper .Cover and cook until the carrots are done.Now add the orange juice and the coriander powder.Let it cook for 2 more minutes.Puree the soup in a blender and garnish with fresh coriander.Serve hot!

nice recipe but there's no mention of the amount of water in the list of ingredients
