Halloumi, Cranberry and Stuffing Bites

As a Christmas hors d'oeuvre, these are (veggie) Christmas on bread. I was inspired by a sandwich I had in a deli, Munchies, in Dublin. The saltiness of the halloumi is delicious with the cranberry sweetness and the stuffing adds further flavour. These work best with ciabatta bread but you can use what you have. I homemake the cranberry sauce using Jamie Oliver's recipe and buy the stuffing ready made in the supermarket. —VeggieQueen

Ingredients
  • 2 packets 500g halloumi
  • cranberry sauce
  • sage and onion stuffing
Directions
  1. Cook the stuffing according to the packet. Usually it needs about 20 minutes in a 180 oven, but whatever heats it through.
  2. In the meantime, slice and fry your halloumi in a dash of olive oil until golden brown and crispy. About 3 minutes each side on a medium heat should suffice.
  3. Now is time to assemble. Take each slice of ciabatta and spread enough cranberry sauce to cover the bread and moisten it a little. Then spoon on some stuffing. Quantities are up to your taste but make sure there is enough so that it can be tasted, as the other flavours are strong. Top with a slice of your warm halloumi.
  4. Serve and await the compliments. Enjoy!
