Tortellini Salad with Veggies

A really nice healthy pasta with veggies and creamy cheese on top. Perfect for a light dinner, or lunch. Can be easily made with any veggies u have in your fridge. —corinam88

What You'll Need
Ingredients
  • 8 ounces tortellini
  • 1 cup thinly sliced scallions
  • 1 red bell pepper
  • 1 green/yellow bell pepper
  • 6 ounces cherry tomatoes
  • 2 ounces feta cheese
  • 3 tablespoons olive oil
  • juice from half a lemon
  • salt
  • pepper
Directions
  1. Boil the tortellini according to the instructions on the package. Drain them and rinse with cool water.
  2. In a bowl put the sliced scallions along with the sliced peppers and the cherry tomatoes cut in half if small, or in quarters if they are bigger. Add the olive oil and lemon juice and mix. After that add the tortellini, season with salt and pepper, mix again, sprinkle some feta cheese on top and serve. Enjoy!
