This recipe sort of evolved from one called "Reggie's Wedges" which I found in Bon Appetit several years ago. Basically it was mayo, grated cheddar, green onions and ripe olives spread on English muffins and baked. The family loves it! For this one I used the same technique with different ingredients...I think everyone will be happy with this one too. It's quick and easy and can be prepped far in advance. —inpatskitchen

What You'll Need
Ingredients
  • 2 6.5 ounce cans of chopped clams drained thoroughly (save the juice and make Bloody Marys!)
  • 1 1/2 cups finely grated Swiss cheese (I just used a domestic)
  • 2 green onions, thinly sliced
  • 1/2 cup mayo
  • 1/2 teaspoon Aleppo pepper (or substitute just a little cayenne)
  • 1 12 inch baguette cut into 20 rounds
Directions
  1. Thoroughly combine all ingredients except the bread. Spread the clam mixture on top of each bread round and bake the rounds at 375F for 12 to 14 minutes. Serve hot!

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining. My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!

Pat, what brand of canned clams do you use?

Hi Bevi! I normally use Doxee Chopped because they're readily available at my regular grocery store.
