Shred 1/2 pound of American cheese. Blend one small jar of pimentos with their liquid to a puree stage. Add: 1/4 cup mayonaise, 1/4 cup sweet or dill pickle relish and the pureed pimentos to the shredded cheese and mix well.
Cut across 4 stalks of celery making 4 even pieces and fill the center of the celery with the pimento cheese mixture. Chill until serving time and serve cold.
My family loves this dish to accompany any meal in place of a salad or as a party or picnic food. It goes great with a bowl of chili or soup instead of a sandwich. We like the dill pickle relish in this as it give a unique flavor without the sweetness.
