This on the go quick bread has everything you need for breakfast -bacon, eggs, fruit, maple syrup all rolled into one. So pour yourself a cup of coffee or a cold glass of milk and enjoy!!

What You'll Need
Ingredients
  • 4 slices bacon, cooked crisp and crumbled
  • 1/2 cup pecans, toasted for 5 minutes in a 350F oven and then coarsely chopped
  • 1 medium apple, cored and diced finely (leave the skin on- it's good for you!)
  • 8 tablespoons (one stick) softened butter
  • 1/2 cup packed light brown sugar
  • 2 eggs
  • 3/4 cup dark amber maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Directions
  1. Whisk the flour, baking powder, baking soda and salt in a small mixing bowl and set aside.
  2. In a large mixing bowl, cream the butter and brown sugar until fluffy with a electric mixer. Add the eggs, one at a time while beating and then add the syrup and vanilla extract.
  3. Stir in the apple, pecans and bacon and then stir in the flour mixture a little at a time until fully incorporated.
  4. Pour the mixture into a 9 x 5 inch well buttered loaf pan. Bake in a pre heated 350F oven for 50 to 60 minutes or until that toothpick comes out clean.

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining. My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!

I made this bread yesterday and found that it was easy to make and came out very well. I might reduce the maple syrup by a little bit and possibly add a bit of maple flavoring but otherwise it is a delicious recipe.

We just had this for breakfast this morning -- WONDERFUL! The bacon is subtle and the cake is moist, with so many different textures and pops of complimentary flavors. Thank you for creating and sharing this great recipe!

NOTE TO ALL: I'm trying to add 8 tablespoons softened butter and 1 medium apple, cored and finely chopped with the skin on to the ingredient list. Will keep trying...for some reason these ingredients are being "rejected" by the system.
